8-Year-Old Samuel's Taco Dogs at the R Family Cafe

        

After reading on Facebook the other day that the grandmother of our neighbors was going over to their house for lunch made by her grandkids, I was excited when they posted a photo of their lunch made by 8 year old Samuel and thrilled when he agreed to come over and allow me to interview him for his recipe for "Taco Dogs".

Apparently, entrepreneurally-minded Samuel has been busy this summer running a business he calls "The R Family Cafe".  He charges $2.00/5 year membership for regular lunches and an extra $1 per "romantic meal".  Gene and I will have to take him up on that one!  Wonder what he charges to cook for a dinner party of 4-6?  We might have to contract him for one of our Dexter dinners, although with the violence and Debra's cursing, we'll probably have to send the Chef home to bed prior to  showtime!

When I asked what his little sister was doing while he was slaving away over a hot microwave, Samuel informed me that she "played on the computer" but after lunch provided an impromptu ballet recital for the entertainment.

When asked what he served with his taco dogs, Samuel stated that his mom steamed broccoli from their backyard garden "you know, on top of the stove where the fire is" and then put cheese on it to form a tasty sauce.  He also said that since they had to pick off a few bugs who were trying to munch for free on their garden broccoli, that meant it was extra good. I agree. That's how you know your garden is successful, when you have to fight the critters and bugs for your produce!

All I have to say in closing is "Watch Out!" to all my local chef friends: Dave Ponder, Steve Young, and Brad Lyons, Samuel is on his way up and he's going to be a force to be reckoned with!

Mini Trial Run: Four Meals in the Freezer Recipes in Two Hours

 

  Like everyone else on the planet I have a job, and like a lot of other people on the planet, I work nights.  It makes for odd schedules in so many ways, and meals, according to me and everyone I know who works 12 hour overnights, can be a nightmare...or at least challenging.  I've spent hours on Pinterest searching for and planning a big cooking day where I stock lots of healthy meals in the freezer so that I don't dread cooking as much on my work and sleep days or make Gene do it.  I know, it's a pretty pedestrian fantasy but trying to avoid the non-nutrition of fast food and the expense of restaurant food by cooking clean home-made meals consistently (the key is consistently) can be a challenge. It ain't for wusses, that's for sure!

I did a mini trial run this afternoon on the whole pack the freezer in one afternoon concept and I have to say it was much easier than I thought it would be and very emotionally rewarding. it's great to know that I already have dinner for my work day tomorrow prepped and in the firdge and a half dozen easy options in the freezer for my sleep day on Tuesday.  This will be particularly good for when I work stretches of 12 hours on/12 hours off.  12 hours sounds like a lot of time until you try to do all those normal little things like sleep, bathe, spend time with the family, answer emails, watch a little of the boob tube, let alone trying to cook from scratch--and we don't even have kids!  My admiration is off the charts for the moms and dads who work 12 hour overnights and manage to keep the family and their sanity together and dressed in clean clothes and with full bellies.

I chose four coordinating recipes this afternoon (recipes/links/photos follow) mainly to make it easy on myself and because both ground beef and round steak were on sale at my market this week.

Beef Braciole (Stuffed Flank Steak)

 

 Flank steak can be a challenging piece of beef to work up well.  It's cheap and flavorful so it's worth the effort but it's best in low and slow cooking methods, except when flash grilling to a medium rare for fajitas.  My mother made Swiss steak often with it when I was growing up, simmering it for hours in an onion, celery, bell pepper tomato sauce and serving over rice or mashed potatoes. Talking about it now makes me crave it so that's definitely on the menu for next week!

Another favorite preparation is Beef Braciole, or stuffed, rolled flank steak. The traditional Italian stuffing is bread crumbs flavored with garlic, onion, and parsley, although stuffed with strips of sweet pepper, onions, and garlic, is another personal favorite.

The key to flank steak is in preparing the cut itself.  The extra time spent removing the prevalent silverskin and pounding that sucker out thin can make the difference between a really "Wow!" dish and a mediocre one.  Everything else is embellishment. Don't let the number of steps being intimidating if you've never made this dish before. Once you've done it once, the second and many times after will feel easy.

 

Baked Mostaccioli w/ All Day Slow Cooker/Crockpot Meat Sauce

 

 There's nothing like pasta, the ultimate comfort food, to feed a small army of company at the holidays.  It's tasty, it's easy, and it can usually be made ahead, all pluses in my book so that I can serve a delicious meal to my friends and family but also be able to relax on the day of and during the party instead of running myself ragged, cooking. 

Traditionally at New Year's Eve, I make a big lasagna, but this year I went to the same song, different verse, choosing to created a Baked Mostaccili dish instead. 

Several of my guests plus friends on Facebook asked for the recipe, so this is it:  Glenna's Baked Mostaccioli for a Crowd.  Even though the recipe easily serves 8-10, it can easily be cut in half for a family dinner or can be made as a whole and split into two separate baking dishes, freezing one for later. 

   

Folks Who Use My Recipes: No Work Crockpot/ Slow Cooker Chili

My sister, Suzanne, posted this photo to Facebook tonight after posting this morning that she'd come home from a great night's work and decided it was chilly enough for...well...chili!

Yummy.  My recipe, the result of an experiement several years ago, makes a chili with a texture where the meat and beans become very harmonious.  It sounds like an odd thing but by putting the extra lean ground beef difectly into the pot instead of browning it and addit last, the resulting texture is one that even people like me who aren't huge meat texture fans can love.

Excuse me, I have to make a trip across town to see if there are leftovers.

Broiling the Perfect Steak in Five Easy Steps

Going out to dinner for a nice steak can be just the thing after a long day, but doing the same thing at home, only in t-shirt, shorts, and no shoes, can be just the ticket as well.  Steaks are one of those things that seemed intimidating to me years ago, but it only took a little practice to gain confidence quickly.

Lots of folks are very accomplished on the grill. To be honest, I'm not so much simply because with only me and Gene in our small family, it feels like way too much work to drag out the grill for two steaks.  The answer? Broiling.

 With four simple ingredients and five simple steps, the process is painless.

Better Than Mom's (Sorry Mom!) Lasagna

 

 

Sorry, Mom, even though you were a fabulous cook, I think in this one instance I beat you at your own game. 

I love lasagna but with only two of us it's something I only get to make when we're having company.  You just can't make a small lasagna!

So for New Year's Eve, that's what I did, although I stepped up a few of the ingredients my Mom used to use, switching out ricotta and cream cheese for the cottage cheese, and using a 50/50 mix of ground beef and country sausage for my Slow Cooker Meat Sauce. 

We were all pretty pleased, patting myself on the back. The result was rich without being overwhelming and not too wet, not to dry, perfect texture. Will be making these changes always from now on.

 

Timpano di Maccheroni: The "Mythic Pasta Dome"

  

This recipe was so much fun to make!  I'd seen it years ago, a classic Italian dish made famous by Stanley Tucci's movie "Big Night" , the story of two restauranteur brothers (Tucci and Tony Shalhoub, more recently starring as Adrian Monk) whose fortunates are on the wane.  In a last mad dash, they have one "Big Night" extravaganza to save the restaurant and this is one of the dishes they served.

I served it our Dexter Dinner group to celebrate the season six premiere of Dexter. We gathered for Timpano, Death in the Afternoon cocktails, and Dexter (Apple) cake. Everything, including Dexter, was delicious!  This recipe is definitely a showstopper and very flexible. I'll be serving it again.

Several years ago, I had planned on making it for my pasta-lovin' niece Jordan's birthday party as a truly celebratory entree but at the last minute I flinched, afraid I would leave the whole family in the lurch if I messed it up, and simply served baked mostacciola instead. While the dish does have several steps, almost all of them can be made ahead and the whole dish can easily be finished early on the day of serving and baked a bit before serving.  Actually, with at least a half hour cooling time it's a great dish to take to a potluck or to serve at an open house. I only made a 2qt bowl full and not only was it plenty of food for the four of us watching Dexter that night, there were leftovers, and during the dinner, the dish was still warm to the touch 45 minutes after cutting.

As much as I sort of dreaded and anticipated and was scared and excited all at the same time about preparing this dish, it really is much easier to make than it looks! I promise.

Slow Cooker Meat Sauce for Pasta

 

The first step in preparing for the "mythic pasta dome", Timpano is to create meatballs (traditional) or chunky meat sauce for the pasta.  Although I eat meat, I've found that many times I have a little texture problem when it comes to meat and I find myself pushing away the ground beef or meatballs and eating the pasta and sauce.  I do the same thing with chili with beans: I tend to eat the beans and work around the larger chunks of meat. Not any more.  Since experimenting one time with chili by putting the raw ground meat into the crockpot and slow cooking it for 10+ hours I've found that I know longer push aside the meat. The long slow cooking breaks down those tougher textures for a silker, more homogenous sauce.  I now always make my chili and pasta meat sauce this way.  The convenience is great also: throw it in the slow cooker and forget it.  This recipe makes approximately seven cups, three of which will be used in the Timpano.  The other three cups freeze very well for another meal another time. 

Dexter Dinner: Timpano, Dexter Cake, & Death in the Afternoon Cocktails

 

Dexter premiered season six last night and we were there! Last year, my cousin, James, came over to the house on Sunday nights so we could all watch Dexter together since we were all huge fans.  We adopted Auntie Miranda into the cult and have been a Dexter Dinner foursome ever since. We always meet at Gene's and my house and I make dinner, usually using them as guinea pigs to test new recipes.  It's a win-win for me and for them and the safety net is that if it's ever is a win-lose, there's always pizza that can be delivered.

 

Literally, for years I've been wanting to make Timpano, the classic "mythic dome pasta" (Mario Batali) dish made famous by the movie Big Night from 1996 where Stanley Tucci, as one of two restanteur brothers (Tony Shalhoub is the other) makes this dish for their "big night" make it or break it extravaganza.  My understanding is that Tucci himself came up with the idea to use this recipe in the movie since it's one that his family actually makes for special occasions in real life. In 1999, following the popularity of the food from the movie Tucci's mother and the chef who consulted on the film authored a cookbook "Cucina & Famiglia: Two Italian Families Share Their Stories, Recipes, and Traditions" by Joan Tropiano Tucci and Chef Gianni Scappin.

This week I'll be blogging my version of the Timpano recipe starting with a 15 hour slow cooker meat sauce for pasta, Auntie's fruited salad and vinaigrette, the apple cake with caramel apple filling, and Death in the Afternoon cocktail created by Ernest Hemingway using Absinthe which is now legal in the U.S. again.
