I have a confession. I have sort of a love/hate relationship with Pinterest recipes. I have made a lot of recipes that claim to be "the best ever!" and "only 3 ingredients!" and have been sorely disappointed time and time again. But once in awhile I come across a recipe that doesn't boast anything and ends up being so tasty it makes its way into our regular recipe rotation. This is one of those recipes. Very simple (more than 3 ingredients, though!) and easy to put together, it tastes like something I slaved over. Gene's response was "smells great--looks fancy!". Later, while eating, he said "Oh, yeah. This works!" I think this will be one I teach Gene to make for my sleeping days (I'm a nightshifter). We will definitely be making it again and again!

Baked Pork Chops and Apples with Brown Sugar Glaze

Ingredients
4 boneless pork chops (approx. 6 oz each)
2 apples
1 tsp (or so) cinnamon
1 tsp (or so) nutmeg
2 Tbsp butter
1/2 cup brown sugar
For original recipe details click here: Baked Pork Chops & Apples. I made a few small changes so my directions are as follows:
1) Core and slice apples (peel on) into 20-24 slices. Arrange in the bottom of a cooking sprayed oven safe casserole dish. Sprinkle with cinnamon and nutmeg.
2) Trim chops of excess fat (I wish I had trimmed mine more). Generously salt and pepper them on both sides. Arrange on top of apples.
3) In microwave safe cup, melt butter and brown sugar together. Spoon over top of chops.
4) Cover and bake at 350 degrees for 45 minutes. Remove cover and bake for 10 minutes more or until nicely browned. Remove from oven and let rest for 10 minutes before serving.
Nutrition per 1 chop and 1/4 of the apples: Calories 460; Protein: 46; Carbs: 15; Fat: 19; Fiber: 3.
