Newlywed bride Sarah made this incredilble looking lasagna for hubby Sebastian and put these photos up on Facebook--is this not beautiful looking and scrumptious sounding? I'm going to give this one a try as soon as I get through this work stretch.
Although I will be working Christmas Eve, I love the tradition of other friends of ours, Janell and Jerry, who always have lasagna on Christmas Eve with just their kids and then get together with all the family members on Christmas Day. I've always loved their tradition. It feels right to have your immediate family home on Christmas Eve for a cozy meal and small family night and then let the holiday bloom out the next day in all of its family-ness.
Just in case I get next Christmas Eve off...this is what Gene and I will be eating.
Mushroom, Goat Cheese and Spicy Chicken Sausage Lasagna
Recipe from Jenna of "Eat, Live, Run: Celebrating Life one Crumb at a Time" food blog:

Ingredients:
Directions: Preheat oven to 350 degrees. In a bowl, mix together the ricotta cheese, salt, pepper and garlic. Spray a 9 x 13 inch pan with cooking spray and then drizzle in about a quarter cup of the marinara sauce. Lay three lasagna noodles flat. On top of the noodles, spread a little bit of the ricotta mixture, followed by a small handful of mushrooms, sliced sausage and crumbled goat cheese. Follow with another quarter cup of sauce and top with three more noodles. Repeat these process three times, ending up with a layer of noodles and the remainder of the sauce. Sprinkle the mozzarella cheese all over the top, followed by the rest of the goat cheese. Cover pan very loosely with tin foil and bake for 40 minutes. Remove foil and bake for an additional 10 minutes. Let cool completely before slicing and serving. Time: 1.5 hours |
Thanks for reminding me of how YUMMY this was! The leftovers kept beautifully in the fridge, by the way.

Thanks so much for sharing it with me!
I did make lasagna last night (NYE). I thought about the goat cheese because I love it so much but I ended up tinkering with my mom's standard lasagna and it came out pretty well. I'll blogging that this week.
You just can't go wrong with lasagna!
