Thank you to Brittany for making this WUN-DER-FUL spiced cupcakes for our November Nightshift Birthday Party. Holy cow, believe me, you can't eat just one.
Brittany's Punkin Pie Cupcakes with Spiced Frosting
Cupcake Ingredients:
- 1 1/2 cups cake flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 1/4 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 3 eggs
- 1 can 15.5 oz can pumpkin puree
- 1/2 cup expeller-pressed canola oil or other cooking oil
- 1 cup granulated sugar
Cupcake Directions:
1. Pre-heat oven to 350 degrees and line cupcake tins with cupcake liners.
2. In mixing bowl, cream together pumpkin, oil,.. and eggs. In separate bowl, stir together rest of ingredients. Add dry ingredients into wet ingredients in 2-3 batches, stir just until mixed. Do not overbeat.
3. Fill cupcake liners 3/4 full and bake for 15-22 minutes or until toothpick stuck into the middle of one comes out clean.
Makes approx. 18 cupcakes
Frosting Ingredients:
- 1 cup softened unsalted butter
- 3 cups powdered sugar
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 2 tsp vanilla
- Dash of salt
Frosting Directions:
1. Dissolve salt into vanilla and set aside.
2. In mixing bowl, whip butter until fluffy and light colored. With beater on low, add spices. Then add powdered sugar a bit at a time until all is incorporated. Add vanilla and whip on medium speed until frosting is light and fluffy. If frosting is too thick, at a a little milk a tsp or two at a time until desired texture is achieved.
Frost cupcakes with knife or pastry bag and choice of tip.

I used the icing recipe for a batch of cupcakes I made and it was delicious! I haven't used the cupcake recipe yet but would like to. One question: how much milk is needed? The instructions mention milk but i didn't see it in the ingredients. Many thanks!

Thanks for the comment, Cathy! So glad you liked the frosting and sorry about the confusion with the cupcake batter. I double checked with Brittany and she verified "no milk" so I removed that from the directions. Happy Baking!
