Love fall and all the desserts that go with it, including this apple cake with fresh caramel apple filling! Not to mention the Dexter aspect...hehehe!
Chopped Apple Cake
from Mae Anderson (from a newspaper clipping, I believe)
Cream together:
- 2 cups sugar
- 1 cup shortening, cooking oil, or butter
- 2 eggs
Mix together and then beat in with sugar/butter mixture until batter is smooth:
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 2 Tbsp lemon juice
- 1 tsp baking powder
Mix in by hand:
- 4 cups chopped apples, skins on
- 1/2 cup raisins (optional)
- 1/2 cup chopped walnuts or pecans
Directions:
Pre-heat oven to 350 degrees. Spoon batter into a greased 9"x13" pan or three 9" round pans. Bake larger cake for 40-45 minutes or until nicely browned and top springs back to touch. Bake rounds 25-30 minutes or until nicely browned and tops spring back to touch.
Can frost or eat plain.
Caramel Apple Filling

- 2 apples, peeled and small diced
- 1/2 cup water
- 1 cup brown sugar
Directions:
Placed diced apples and water in a sauce pan over medium heat and simmer until soft and can be rough mashed with a fork, leaving some bits whole.
Add brown sugar and continue to simmer until liquid has thickened and become slightly syrupy.
Allow to cool before filling cake.
