Auntie Miranda brought dinner to last week's Dexter Dinner and OMG it was wonderful. The even better part was that it was good for us too! This is the perfect winter meal: rich and soothing, deceptively simply looking but with complex flavors from the spices and pureed vegetable base. I'll be making this myself again and again. Chicken Vindaloo
Recipe from Epicurious
- 1. 3 C Chopped Onions
- 2. 1 1/2 C Chopped seeded Tomatoes (fresh or canned)
- 3. 21/2 T White Vinegar
- 4. 1 Large Clove of Garlic - minced
- 5. 1 tsp minced fresh ginger or 1/3 t dried ginger
- 6. 1 tsp tomato paste
- 7. 1 tsp Garam Masala (recipe below)
- 8. 1 tsp ground turmeric
- 9. 1/2 tsp smoked paprika
- 10. 1/2 tsp ground cumin
- 11. 1/2 tsp ground corriander
- 12. 1/4 tsp cayenne pepper (or more or less to taste)
- 13. 2 Tbsp Vegetable Oil
- 14. 6 Boneless Chicken Thighs cut into 1" pieces
- 15. 1 1/2# Russet Potatoes - cut into 1" pieces
- 16. 1 1/2 C Chicken Broth (or water)
