Fried Eggs: Tip of the Day

This was a fluke but I'm going to do it again. I was in a huge hurry yesterday before leaving for work and when I grabbed a skillet in the stack to fry my egg in it for a quick breakfast, I didn't realize I'd grabbed my wok skillet.  But guess what? It makes  a perfectly shaped fried egg.  I was just a little impressed with myself. It was beautiful!  Hmmm...love it when mistakes turn into tips to keep in mind for the future!

But, Mom, Everybody Else is Doing It

I've heard this called a couple of different things, Toad-in-the-hole is the most commong but I've also heard it call Campfire grilled eggs.  The premise is easy. Take a piece of bread, tear out a hole in the middle, butter both sides, grill it with an egg in the center to whatever degree of doneness you want, flipping it once.

I had some really nice home-made bread leftover, and since I didn't sleep well, this seemed the perfect thing to start my day. Plus, I've seen at least two, if not three other blogs making this and I simply craved it. 

The only difference I have in the way I make mine is that the little perfectionist Glenna comes out of me and forces me to use a small juice glass to twist the hole out of the center, as if I were cutting out biscuit dough. What can I say? I like the perfect edges. Then I grill the center piece of bread along with the rest.

One of the blogs I read cooks the egg hard (I hope) because she uses this as a breakfast sandwich to eat in the car.  I like my fried and poached eggs as soft as the yolk can be if the white is completely cooked.  I can imagine me walking out to the car with my version...or more accurately, I can imagine the first bite of my soft cooked egg sandwich in the car. And then the act of turning around so I can go home to change clothes for the day.

A New Year Dawns: ARF/5-A-Day

Cate, over at Sweetnicks, hosts a really nice event called ARF (Antioxidant Rich Foods)/5-A-Day that's always inspiring us to remember to eat our veggies and other foods that are good for us. Does that make Cate our blogging Mom? I don't know either but I'm determined to eat healthier this year with only occasional lapses into Little Debbie land. For a change of pace today for breakfast I made Gene and I egg salad on low fat sourdough English Muffins.  Eggs are very good for you, the whites are made of albumin, which I found interesting in physiology class, albumin is the same protein in your blood stream.  Wild, huh?  And even though most people shy away from the yolks because of the fat, especially if you buy free range chicken eggs, the yolks are loaded with lots of goodies like omega oils and vitamin E. To me, that's worth the fat grams.

Gene likes this recipe a lot. Because why? Because he's a wonderful man but basically lazy. He says this egg salad is like eating deviled eggs with a spoon out of the bowl or as a sandwich. Funny, I never thought eating deviled eggs was that much work in the first place but I'll take the compliment and smile all the way to work this afternoon with it.  I know he meant something nice when he said it because he was being all touchy feely at the time and men never have hidden agendas with compliments, right?  Yeah, I didn't think so  either.

Ham & Cheese Crepes: Breakfast Blogging

I'm going to bend the rules a teeny bit for breakfast blogging. I neither made this homemade, nor did I eat it on the weekend, but it is breakfast and it is a meal that's near and dear to my heart and memories. These ham and cheese crepes from Village Inn powered my year through respiratory school.  I can't tell you how many mornings my body woke me up at 4am (always!) even after I'd finished a hospital clinical the night before at 11pm and needed to be at class at 8am.  It would have been easier if I could have slept in an hour or two more but my head is just wired for 4am no matter what time I go to bed.  So on class days, if we had a test, I allowed myself Village Inn for breakfast. No matter how many times I looked at the menu and decided on something different I always ordered "Ham and Cheese Crepes".

The inside is stuffed with scrambled eggs and cubes of country ham, the top covered in cheese sauce and sprinkled with paprika.  Their hashbrowns are my favorite in town, soft on the inside and just barely crunchy on the outside, perfectly browned. The cheese sauce on top of the hashbrowns is my request. It's an indulgence that got me through the day, or at least through until lunch.  Our lunches during respiratory school were...another story for probably never another time but they are good memories.

This is my favorite lazy day at the lake breakfast. We used to have a little cabin down on a nearby lake, Taneycomo, and we loved to take friends down for the weekend.  That is the perfect time to make this dish because it does take a little time and patience and it's not something you really want to go to the trouble for, say, just for yourself.  For four, it seems worth the time and effort of making cheese sauce even if you are on vacation.

Loosely based on a breakfast served at a hotel I worked at and the classic Eggs Benedict, this is more MY version of those things.  I know. I just can't leave recipes alone. When tomatoes are in season, I swear, I'd eat them on chocolate cake.  Fresh garden tomatoes are sooooooo good with eggs and my lovely neighbors keep supplying me with them this summer since I didn't have time to put out my container garden this year.  I'm making the most of it. When I see Dave walking across the street with a bag in his hand, I meet him at the door, offer to let him have a seat, put his feet up, get him something to drink, and then snatch the bag out of his hand, saying "Oh I guess we can eat a few more" and quickly hide it before he can change his mind.

Well, I do say thank you even if I am blatantly tomato greedy.
