These were a huge hit at our New Year's Eve party and I'll definitely be making them again. Can I say they're good for you and will help you lose weight this year? Uh, no. But I can say they are delicious and a wonderful treat. No offense, Mars Inc, but I did hear the comment "I like these better than Twix bars" several times. The other up side is they're super easy to make with a shortbread base, melted caramel filling, and melted chocolate topping. Thankfully, I sent most of them home with folks or I'd be in serious trouble.
Cook's Notes: These are pretty popular on Pinterest. I looked at a half dozen recipes and never could find one I really wanted to do so I simplified the process and did it my own way.
Copycat Twix Bar Cookies

Makes 28 cookies.
2 1/2 cups all purpose flour
1 cup butter (chilled)
1/2 cup light brown sugar
Pinch of salt
2 bags (11 oz) Kraft Caramel bits (or squares, unwrapped)
1/4 cup milk
11 oz semi-sweet Chocolate chips
Pre-heat oven to 350 degrees.
1) In a standing mixer or food processor, combine flour, chilled butter cut into pats, salt, and brown sugar until mixture is coarse and crumbly, the size of small peas. Can also cut in by hand with a pastry cutter.
2) Cover a 10" x 14" jelly roll pan (cookie shit with a 1" side) in parchment or waxed paper. Press shortbread mixture firmly into pan until evenly dispersed. With a fork, prick holes evenly all over the surface of the shortbread. Bake for 10-15 minutes or until barely golden and cookie mixture is firm to the touch. Set aside to cool.
3) In a medium saucepan over medium heat, melt caramel bits and 1/4 cup milk until creamy and smooth. Layer over the shortbread evenly with a spatula.
4) Melt the chocolate in a microwave safe container 1-2 minutes at a time, checking and stirring often so as not to burn. When completely melted and smooth, pour over caramel/cookie and spread evenly with spatula.
Allow all layers to cool completely before cutting.
