What's better than a hot bowl of comfort on a cooooooooold winter day? A hot bowl of comfort that's as good for you as it tastes! Can it get any better than those two things? It can when it's a quick layer into the crockpot, flip the switch, and getting to go one of the other million things on my to-do list until it's time to grab a bowl, a spoon, and our appetites.
Crock-pot/Slow Cooker Kielbasa Casserole

3 cups Potatoes, 1/2" - 1" dice
1 cup Carrots, 1/2" - 1" dice
1 cup Celery, fine dice (this is a nice place to use the leafy tops)
1 medium Onion, sliced into crescents
3 cups Cabbage, chopped or shredded
16 oz Kielbasa or Polish Sausage (light or low fat variety)
2 cups Beef Broth
1 Tbsp Worcestershire Sauce
2 Tbsp Brown Sugar
1 clove Garlic, minced
1/2 tsp thyme, dried
1/2 tsp oregano, dried
1/2 tsp parsley, dried
1/2 tsp Black Pepper
Salt (only if needed when tasted after several hours of cooking)
1) Layer first six ingredients into a cooking spray coated slow cooker.
2) Whisk rest of ingredients together until sugar dissolves into liquid. Pour over top of the ingredients in the cooker.
3) Cook on high for 3-4 hours on high or on low for 6-8 hours.
