- 1 lb Almonds, whole and raw
- 1/3 cup canola or other cooking oil
- 1/3 cup brown sugar, not packed
- 1/3 cup honey
- 1 1/2 TBSP curry powder
- 1 tsp salt
In a medium microwavable bowl, mix all ingredients together and microwave on high for 1 minute. Stir. Microwave for another 1 minute. Stir. Microwave for another 1 minute. Stir. Nuts are done when the spices and oil have combined and coated the almonds homogenously. Spread out on a parchment covered cookie sheet in one flat layer to cool.
Store in an air-tight container or divide into bags for gifts. Decorate and label as appropriate for the occasion.
Makes 3 cups.
