The most simple recipe ever and Gene and I both loved it. That's saying a lot for Gene because he barely tolerates acorn squash...so when he says "Yeah, that'll work" I know I've hit on a great recipe!

Acorn Squash stuffed with Apple Butter
Recipe by Glenna Anderson Muse
Serves 2
Ingredients:
- 1 acorn squash, halved and seeded
- 4 Tbsp no sugar added Apple Butter, like this from the Amish Country Store in Branson, MO
- Salt to sprinkle
- Honey (optional)
Directions:
Halve and seed squash, rinse and dry with a paper towel. Sprinkle a little salt over each half, then spoon in 2 Tbsp apple butter and spread around. Place in baking sheet and bake @350 degrees for 1 hour or until squash is tender and squishy.
Serve with drizzle of honey if more sweetness is desired.
