As much as I LOVE colcannon, mashed potatoes with Kale, or any of its "subsidiaries" mashed potatoes with cabbage or spinach or green onions or all of the above, I find this to be a colorful and tasty change of colcannon pace: SWEET potatos mixed with cooked spinach and green onions. Good AND good for you!
Sweet Potato Colcannon

1 large sweet potato
1 cup frozen spinach (or 2 cups fresh chopped up a bit)
2 green onions, chopped (white and green parts)
1 pat of butterr
Salt and Pepper to taste
1. Scrub potato clean and steam in microwave. (See earlier post Microwave Baked Potato). Allow to cool until able to touch and peel. In a bowl, mash up with a fork.
2. In small saute pan, saute spinach and onion in the pat of butter for a couple of minutes, just until spinach wilts and color greens up. Mix this and seasonings into mashed sweet potato.
Reheat in microwave for 1 minute.
