Healthier Fish & Chips

Gene and I don't eat much fried food but every once in a while you have indulge yourself, right? There's nothing better than good fried fish and home-made fries.  But then getting it from most fast food or chain restaurants is mostly a nightmare of wanting in taste and healthiness.

I think I found a way to make a very decent meal at home while still not breaking the artery bank. 

The potatoes went into the oven first. I used a bag of fingerlings along with a few quartered reds, tossing them in a little olive oil and seasoning them with a commercial cajun seasoning mix.  At 350 degrees, they roasted for about an hour to come out crispy browned on the outside and richly soft on the inside.

For the fish, I used nice thick cod fillets cut in generous "sticks", rinsed and dried them, rolled them in flour, and then dipped them into the following batter I threw together from what sounded good. I used King Arthur White Whole Wheat flour and a generous amount of cornstarch to keep the batter from being too bready and heavy.   To fry, I used expeller-pressed canola oil and only enough to shallow fry, not deep fry them for a couple of minutes on each side. The fillets came out crispy and satisfying, crunchy like a restaurant fillet without being drenched in oil.  Gene said the fish coating had the texture of Long John Silver's, "only this tastes better".  I'll take that compliment.

Fish Fry Batter

1 cup White Whole Wheat Flour (King Arthur)

1/2 cup Cornstarch

1 Tbsp Baking Powder

1/2 tsp Salt

1/2 tsp White Pepper

1/4 tsp Garlic powder

1/4 tsp Paprika

1/4 tsp Onion Powder

1 tsp Sugar

1 cup Water (or enough to make thin pancake batter.)

Mix dry ingredients together and add water.  Whisk to mix batter.  Dip the fish pieces in using bamboo skewers.

You know, I've been in the world of fish & chips ... and haven't gone there yet! Yikes!

Of course, you know what's in yours. 'Nuff said.

Glenna ... fixed this tonight with some cod I bought this weekend (totally Protestant, but I *love* Lent bcz of all the fish deals!!). Hubby completely loved it (and so did I). He actually said, "WHERE did you get this recipe?" Well, he doesn't totally understand blogs, so I just said, "Oh, this lady from Springfield." (We're Missourians, too.) And he said, "Hmph." And gobbled some more fish off his plate. I subbed some lemon-lime sparkling water (the cheap grocery store brand) for the plain water, and it was fabulous.

Brilliant. I've had a few goes at making cardiologist-friendy fish and chips. The chips I've sorted using sweet potatoes, but I've struggled to find a better batter approach.
