Simple is Sometimes Best

Fish_roasted_vegs

Dinner was a very simple and easy roasted veggies and fish with a Harry & David Rosemary and Thyme grilling marinade.  Yum. Very nice. Glad I opened that bottle. I'll be swathing the roasties in that until it runs dry.  The veggies are simple. I put a kettle of water on to boil and parboil the veggies one type at a time just to get everything to come out in the even cooking time department and then throw the fish on the baking pan for the last 10 minutes. Couldn't be more simple.

Weekend_herb_blogging_symbol My roasty veggies and fish with their rosemary/thyme marinade are my addition to this weeks Weekend Herb Blogging, created by Kalyn at Kalyn's Kitchen, and hosted this week by Rinku of Cooking in Westchester. Check out her blog later in the week to see this week's round up.

Sweet potato & broccoli - intense color, flavor and antioxidants! So good!
Great fish! This is a menu I love and could eat for days on end!

It does sound like a great dinner when you just want to make a simple meal.

Fish cooked in a no fuss way is my favorite weeknight supper.

Tanna--I agree. it was a great combo. I didn't even miss the calories.

Kalyn--thanks!

Rinku--Me too. So easy and great tasting.

Yummers, that looks fabulous! And it was easy on your knee--good choice!

That looks amazing! I love roasted veggies :)

Sher--thanks! And yes, man, the knees been bad the last couple of days so easy is very needed around here.

Kristina--Me too! Thanks!

Simple, flavourful and satisfying. What else could one ask for? :)

I like sweet potatoes...it is nice to see them in a new way. In the south we smother our sweet potatoes with brown sugar and marshmallows!

Cynthia--exactly my thoughts!

Sanid--I love sweet potatoes too and there's nothing wrong with marshmallows, brown sugar, and pecans, let me tell you BUT I have to cut a few calories somewhere, unfortunately.

I want some of that.

Lin--Thanks! Come over. Anytime. I'll make some for you!
