Leftover Tuesdays: A Roast become Beef Enchiladas

There's a blogging event that caught my eye because of its practicality.  Originated by David at Cooking Chat, the idea is to show something that we all do: refashion leftovers. I found that having the event in the back of my mind actually encouraged me to think along the lines of "Now if I make this, what can I do with the leftovers besides starving Gene out with nothing new until we finish it all?"

So along those lines of thinking, this roast, dry roasted in the crockpot and simply seasoned with salt, pepper, onion and celery flakes, and a bay leaf...

...became these beef enchiladas...

by simply cubing the beef, adding a few cubed potatoes, and seasoning with cumin and cilantro.  They were rolled up into corn tortillas, and covered with a nice jarred salsa, cheese, green onions, and sour cream.  The perfect leftover dinner that didn't feel leftover.

Gawd, the enchiladas look fabulous. And thanks for the mention of dry-roasting a roast in the Crock-Pot. I've always thought one had to put some kind of liquid in, but I can see how it would work without. Must try that.

Alisha--thanks so much. They weren't bad considering I don't have a lot of enchilada experience. I just put in what sounded good at the time.

Nan--Thank you! I really appreciate the compliments. And hey, gotta try the Peeps, LOL! I've only got one more box until Christmas when the snowmen Peeps come out! Sigh.

Lisa--the dry roasting worked really well. Gene went nuts over it. It really seemed to intensify the flavor and there was plenty of juice from the fat in the beef. That sounds diet sacriledge to say out loud but it's true.

Oh, you know how I love's me some enchiladas, and it's been weeks since I had any. Those look fabulous! Now, I'm starving.

Sher--I know! You were my teacher on that one! And just as a point of discussion. I know flour tortillas are usually used with beef but I really liked the corn too. I actually did both and I preferred the corn. Not that it matters...

Glenna, the round-up is now posted. Thanks for participating. One question, have you tried using enchilada sauce from a can for this dish? I could drink that stuff all by itself I love it so much.

Mary--Thanks for your work on the round up! I haven't because I jsut never seem to remember to buy it! I do keep the green enchilada sauce though. Thanks for the idea. I should go write that on the grocery list right now.
